Conde de la Cortina Pedro Ximenez

750mL / Spain

Category: Wine
Sub-Category: Fortified

Tasting Notes:

Mahogany with slight iodized tones in colour.

The nose shows hints of coffee, chocolate and pastry, whilst the palate is intensely sweet, bursting with fresh raisins, unctuous, touches of coffee with milk and cocoa and enough acidity to leave your palate ready for more.

Grape:

Pedro Ximénez

Soil:

Rich in calcium carbonate; the soil and subsoil are formed by soft loam, poor in natural organic material, and are not very fertile.

Vinification:

Grapes on their optimum degree of maturity are spread out on mats to dry in the sun until they become raisins.

When pressed, they deliver an intensely rich must to which grape alcohol is added to prevent fermentation and loss of sweetness.

Food Matching:

Great versatility, desserts, cheeses, or even on its own.

Excellent in the kitchen to prepare sauces and reductions.
