Very old vines of Carignan (60%) and black Grenache (10%), associated to the Syrah (30%).
Very stony limestone for Carignan and Syrah, sandstone for the Grenache. Yields inferior to 30 hl/ha.
In red traditional with maceration of 20 days for Syrah and Grenache and maceration of enter grappes for a part of Carignan. Ageing in vats during one year and half with racking.
Intense nose of ripe red fruits, pepper and violet. The attack is frank and powerful. The tannins are structured.
Wine and food pairings:
To savor with cold meats, a cassoulet or a duck confit.
