Matured for 1 year in large oak vats.

Domaine de Saint Siffrein is situated in the area the the North of the main town of the Châteauneuf-du-Pape Appellation.

Winemaking:

The grapes are harvested by hand with a selection of the best grapes.

The grapes are partially destemmed, slighty crushed and placed in a fermentation concrete tank.

Long vatting time at controlled temperature from 21 days, with pumping-over and punching of the cap to obtain a reasoned extraction of tannins.

Maturing is done during 12 months on oak casks (45 hl) for 50 % and in tanks for 50%.

Terroir:

The terroir is clavey-chalky with large rounded sun-warmed stones, which diffuse a gentle, providential heat that helps the grapes to mature.

The Vineyard:

For 35 years, we cultivate the vineyard with agriculture in an environmental friendly way.

Yield: 35 hl/ha.

Serving Tips:

Serve at 16-18° C temperature.

Wine for ageing.

Tasting Notes:

Nose with Peppery notes. Very intense fruitiness in the mouth.

It has aromas of black olive and plum. Full-bodied wine, concentrated with a lush, deep finish. A muscular red!

Food Pairing:

Serve with red meats and game.
