Derrumbes Mezcal San Luis Potosi

Derrumbes San Luis Potosí is made by J. Manuel Pérez in Charcas, San Luis Potosí.
The idea behind this unique mezcal is to take each drinker on a journey through the different agaves, terroirs, and production techniques, so each spirit would have a different layer of complexity.
Derrumbes San Luis Potosí is made using Salmiana agave, that are picked at their maturity and then cooked in an above ground oven known as hornos using volcanic rocks heated by dry quiotes.
After the agave hearts have been cooked they are milled using the tahona method.
The salmiana agave juices are then fermented naturally in masonry vats with wild yeast.
Derrumbes San Luis Potosí is twice distilled using copper pot distillation.
This process adds to the unique character of the mezcal, which after distillation is 43.5% abv and is rested in a large glass bottle before the final bottling.
Derrumbes San Luis Potosí is a relatively austere nose that gives way to a sweet and complex palate that's very approachable for a traditional mezcal.
This mezcal is well balanced and fruity, this is a great mezcal for sipping.
