About Château de L'Aumérade:

One of the key aspects of Château de l'Aumérade is 100% of the wines are estate grown in a region heavily dominated by negociant wines. A 300 hectare estate of which 90 hectares are classified Cru Classé.

The Château was established over 400 years ago and still remains family owned by the Fabre's.

Château de l'Aumérade is part of an exclusive group of estates that form the Cru Classé of Provence established in 1955 before the AOC was created in 1977.

The Cru Classé includes estates such as Château de Selles and Clos Mireille from Domaine Ott.

Vinification:

From the end of August to the end of September, the grapes are harvested mechanically day and night and passed through a tubular exchanger at 15°C before cold maceration with skin.

This is followed by pressing and juice selection, static settling at 13°C and fermentation in concrete vats at a controlled temperature ranging from 15-18°C in an air-conditioned cellar, to preserve each variety’s flavours and quality as far as possible.

After racking, tangential filtration, blending takes place at the end of the year, and then the wine is stabilised, ready for bottling.
