Winemaking Notes
Grapes are sourced from 30 crus, approximately 75% of which are Bollinger's own vineyards. 80% of these crus are either Grand Cru or Premier Cru (no Grand nor Premier Cru vineyards exist for Pinot Meunier).

On average the blend comprises 60% Pinot Noir (predominately from Ay, Verzenay and Louvois); 25% Chardonnay (Mesnil-sur-Oger and Cuis); and 15% Pinot Meunier (Champvoisy and Passy Grigny) from the recent harvest. Between 5% and 10% of reserve wines are added (from up to 7 different wines - stored under natural cork in magnums under a light pris de mousse, cru by cru, cepage by cepage, year by year. Having this oenotheque at it's disposal allows the House of Bollinger to choose with exacting precision, the cru, grape variety and year that will best ensure the consistency of the Special Cuvee blend.
