Flavien Nowack makes wines on his family's small parcel of Pinot Meunier and Chardonnay in Champagne's Vallée de la Marne. He focuses on all the right things - wild yeasts, spontaneous fermentation, minimal intervention and single-plot vinification, all to create wines that are true expressions of taste.

His Extra Brut is incredibly crisp and dry (just 1.5g dosage) and is the talk of the town all around France. Nowack is the next producer to watch.
