Adelia Prosecco is Cavedon's non-vintage, full-bottle sparkling wine made in the prosecco style from grapes grown in Victoria's King Valley, a region better known among Australian drinkers for its Italian-heritage vineyards than for classic Prosecco DOC. It's built for early, uncomplicated drinking rather than the cellar.

Expect pear and green apple up front, with white blossom and a touch of citrus zest keeping the nose lifted. The bubbles are soft and frothy rather than fine and persistent, and the fruit carries straight through onto a palate that sits closer to off-dry than searingly dry.

There's gentle acidity rather than a hard edge, a light body throughout, and a clean finish that doesn't linger, exactly what a wine meant for the first glass of the night, not the last, should do.

It's an easy match for the usual prosecco company: fried food, pizza, antipasto boards, or simply poured on its own as the drink that starts the evening.

Serve it cold and drink it young; this isn't a style built to improve with age.
