Chardonnay Is Back: Why Australia's 'Second Grape' Deserves a Second Look
For a while, chardonnay had an image problem in Australia. The heavy, buttery, oak-forward style of the 1990s and 2000s left a lot of drinkers assuming all chardonnay tasted like vanilla and butter. That style still exists, but it's no longer what's driving the category. Cool-climate, restrained chardonnay is one of the more interesting things happening in Australian wine right now, and it's worth a second look if you wrote the grape off years ago.
What changed
Winemakers in cooler regions, Yarra Valley, Adelaide Hills, Beechworth, Tasmania, and parts of Margaret River, shifted toward earlier picking, less new oak, and longer lees contact instead of heavy oak flavour. The result is a style that's tighter, more citrus and stone-fruit driven, with a textural, savoury quality rather than an overtly buttery one. If your last chardonnay memory is from a decade ago, this style will genuinely surprise you.
What to look for on the label
A few signals that a chardonnay is likely to be in this newer style:
- A cool-climate region name (Yarra Valley, Adelaide Hills, Tasmania, Beechworth, Orange)
- Vintage within the last 2–3 years, chardonnay doesn't need long ageing to show well
- Producers known for restraint rather than oak-driven "reserve" tiers
Unoaked doesn't mean unstructured
A common misconception is that unoaked chardonnay is simple. Done well, it isn't, the texture comes from extended contact with lees (the spent yeast cells left after fermentation) rather than from oak barrels, giving a creamy mouthfeel without the vanilla or toast flavours oak brings. It's a completely different way of getting complexity into the glass.
Food pairing
Cool-climate chardonnay is one of the most food-friendly white wines available. It handles richer dishes, roast chicken, creamy pasta, grilled seafood with butter or cream sauces, better than lighter varieties like sauvignon blanc or pinot grigio, while still having enough acidity to work with lighter dishes too.
