Tasting Notes:

A beautiful aromatic nose tending to freshness and complexity. Notes of biscuits, croissants, brioche, and white fruits (white peach, poached pear) are then enhanced by touches of citrus fruits, white flowers, and fresh butter.

Some grilled, toasted and spicy notes. Beautiful intensity.

The attack in mouth is frank, fleshy with some fat. Champagne Carbon Brut is fresh and the dosage just accompanies the body of the wine.

A chalky minerality is perceptible, the texture is soft, and the blend expresses itself without excess. The fruity aromas and their length will amaze your palate.

The finale is very clear, slightly mineral, and rather long (6 to 8 seconds). It leaves the memory of a beautiful acid balance with sugar which puts the papillae into a state of undeniable comfort.

Great complexity is created by the interplay between its youthful aromas and those arising from its long cellaring.

The Vines:

The art of making unique champagne needs careful thought.

It requires superior quality grapes, in this case Grand Cru Chardonnay from the Cote des Blancs, Grand Cru Pinot Noir from the Mountains of Reims, and Premier Cru Pinot Meunier from the Marne Valley.

Then the expertise and control of the winemaker's use of traditional techniques and creativity are of utmost importance to coordinate and blend all these delicate wines to find the right aromas and a perfect balance.

The fundamentals must be respected: perfect maturation and quality of the grapes, love of terroir inherited from the family, and secrets passed down through generations.

Fed by tradition and an intimate knowledge of Champagne, Carbon took time to explore and to reinvent it by creating an elixir which aims for excellence and perfect balance.

Harvests:

Respecting the Appellation Champagne, grape harvests are done entirely manually. The press is a traditional 4000kg model which allows selection of the best parcels and the best quality juices for the 1st cuvee.

Winemaking:

A rigorous selection of grapes provides high quality juices. The Brut is aged in French oaks barrels of 228 litres in the ancient and traditional manner. Quality is a priority. The originality of CARBON BRUT lies in our choice to avoid malolactic fermentation in order to respect the nature of the grapes and the personality of the terroir.
