Special Selection comes from vineyards that are about 40 years old in the mountains of Axarquía, situated at an altitude of approximately 400 m. After the manual harvest, the grapes are brought to a selection table in the winery and, later, to the press. Fermentation is carried out completely in stainless steel tanks and, as is characteristic of this type of wine, the alcohol comes exclusively from grape fermentation; this is stopped by cooling once the desired alcohol content has been reached.
