Soil A thin layer of clayey sands, known as "Barsac red sands", tops the chalky subsoil.
Winemaking Traditional ploughing is performed on the soil of our vineyard and no weed-killer is used. Organic
manures are made with vegetal-based composts. What separates this wine from their regular cuvee, and frankly all other Sauternes wines, is the extreme high sugar levels. l’Extravagance de Doisy Daene can be close to twice as high in sugar levels than their regular wine.
Ageing 75% new French oak barrels for between 18 and 24 months.
