The Gamay is from granitic soils and the Pinot Noir from limestone and clay soils.

Aged in vats providing a well-balanced and rich wine.

Vine Age:

45 to 50 year old vines.

Winemaking:

Manually harvested - maceration of destemmed grapes within 8 to 10 days in concrete or stainless steel vats. Daily cap punching.

Ageing during 4 months is in oak casks and 600 liter barrels called “demi-muids”.

The wine is then blended in stainless steel vats during 3 weeks in order to allow the wine to settle properly.

Light filtration prior to bottling.

The wine is estate bottled.
