Tasting Notes:

Juicy and fruit-forward style of Cabernet Franc, with a savoury undertone to retain depth and complexity.

Equally drinkable at ambient as slightly chilled, perfect summer-weight red wine.

Winemaking:

100% destemmed fruit in open-top fermentors for 11 days with twice daily pump-overs for 1-3 minutes, pressed early and finished in a mixture of tank and barrel.

Established in 2022, DC Shaw is centred in the Adelaide Hills and surrounding regions.

Focussing on varieties suited to the cooler climate: Chardonnay, Riesling, Shiraz and Cabernet. Working side by side with growers who prioritise quality of fruit and longterm vineyard health through their farming practices. All fruit is handpicked, and vinified in-house, striving to make textural wine that express location, reference the old-world but sitting squarely in the new.
