Tasting Notes:

There are three components to this wine; Pinot Gris (Bull Swamp), Pinot Gris (Millstream), Cabernet Franc (Bull Swamp) which are all fermented separately then assembled in September.

The Cabernet Franc is fermented using carbonic maceration and the Pinot Gris is fermented on skins in stainless steel for one month.

All wines are then transferred to puncheon to settle out and come together.

This skin contact wine is far more powerful and savoury than previous examples.

Pale crimson in colour bright and punchy on the nose.

The wine fills the palate with red fruit and spice then throws soft tannin akin to a great Barolo.

2018 for Patrick Sullivan was about aspiration and achievement.

It was about the further ongoing commitment to biodynamic farming, through completing an initial certification audit across all five sites farmed by the estate.

The wines from the 2018 harvest are proving to be the finest release to date, showing unmatched depth and purity which can only be a reflection of farming and patience.
