It is said that once a bat at night tasted a bunch of grapes being aware of an ancient secret.
Even today his descendants trace aerial geometries on the grapes that ripen and still that old secret is revealed in a glass of Nebbiolo

clay and limestone Lequio formation, alternating with marl and fossiliferous sandstone, tending to “elveziano”
Vinification:
After the harvest, which takes place in the first morning hours, the grapes are transferred into fridges, where they are kept for 72 hours at 0°C. A soft pressure and a contact with the skins will follow for about 8 hours. The vinification continues with a further pressure and a natural settling. The fermentation is done for 30% in 2, 3, 5 years old barrel and for 70% in stainless steel tanks. In January we proceed with the wine blending and the wine is bottled in March.

Tasting Notes:
Scents of stones are blended with notes of passion fruit, citrus fruits and sage.
In the mouth it appears to be proud, quick, fresh, full of strong acidic weave.
