Domaine de Saint Siffrein is situated in the area the the North of the main town of the Châteauneuf-du-Pape Appellation.

Tasting Notes:

This wine is brilliant, white gold in colour.

Aromas of white flesh fruits, pear in particular.

The attack in the mouth is fresh and complex with great length.

Terroir:

The terroir is clavey-chalky with large rounded sun-warmed stones, which diffuse a gentle, provenditial heat that helps the grapes to mature.

The Vineyard:

For 35 years, Domaine de Saint Siffrein cultivate the vineyard with agriculture in an environmental friendly way. The yield is low at 35 hl/ha.

The grapes are harvested by hand in the morning at fresh temperature with a selection of the best grapes.

Winemaking:

The grapes are carefully pressed to extract their juice at low pressure. The juice in then fermented at a controlled temperature to extract the grape aromas. It's then preserved on fine lees in suspension for 3 months in barrels of 400 liters. Tartaric stabilization during the winter, clarification and bottled in spring in the Domaine.
