  • THE VINTAGE

Vintage 2007 is an exceptional year in Alsace! 
After a mild winter, a summery spring led to a very early budbreak. Harvest began on the September 10th. Warm days and cool nights with practically no rain during the whole month of September insured optimal ripening conditions.

  • IN THE VINEYARD

We adapt cover crops to our local rainfall. When abundant, we let the grasses grow. When particularly dry, we till the soil or use the rolofaca. In 2007, the vines are cultivated with integrated pest management. The process is controlled by Ecocert France. Grapes are hand harvested beginning of October.

  • WINEMAKING

Grapes are placed in pneumatic presses by gravity and gently pressed for 3-6 hrs to preserve maximum varietal flavors and aromas. Juices are then fermented in temperature controlled stainless steel tanks followed by 4 months aging on fine lees in large, old oak vats for micro-aeration. Sterile cartridge filtration and bottling takes place in August.

  • TASTING

13% Alc by Vol * 147 g/l Residual sugar * 6.5g/l Total Acidity (Tartaric)
Rich, deep golden color. Very ripe almost candied fruit and honey aromas open to a luxurious, well balanced palate. Very long, aromatic final.

  • SERVICE

Can be aged 15-20 years. Store on side between 10-15°C. Ideally served between 8-10°C.

  • FOOD PAIRINGS

Serve with a foie gras, a fruit dessert like tarte tatin or a honey based dessert.
