Tornatore Etna Bianco (2024)

The Tornatore Etna Bianco 2024 is a taut, dry white from the northern slopes of Etna in Sicily, made entirely from Carricante grown on volcanic soils around Castiglione di Sicilia. Pale straw with a green tinge, it leans on citrus and salinity rather than fruit sweetness or weight.
Grapefruit pith, green apple and white peach lead the aroma, with a dry herbal edge underneath — thyme, fennel fronds, a touch of crushed stone. The palate follows the same line: lemon and unripe pear, no obvious oak influence, and a chalky, almost briny character that builds through the middle.
Structurally this is a lean, high-acid white with real drive. The 2024 Etna Bianco carries only light phenolic grip, and a short period on fine lees has given the texture a subtle roundness without blunting the acidity. The finish is long, savoury and clean, closing on lemon zest and salt rather than fruit.
Serve it well chilled at 10–12°C in a decent-sized glass, and let it warm slightly to open up. It suits oysters, salt-and-pepper squid, whiting or snapper off the grill, and pasta with prawns and chilli; it also handles a plate of pecorino and green olives. Drink from now to 2029, with the best balance of freshness and lees texture in the next two to three years.
