The Pala Soprasole Vermentino di Sardegna 2025 is a dry, brightly citrus-driven white from Sardinia, built for freshness rather than weight. Pale straw in the glass, it leads with lemon and green apple before the Mediterranean side of Vermentino shows itself.
Aromatics run to grapefruit zest, white peach and a lift of wild fennel and dried flowers, with a faint almond-skin edge underneath. The fruit stays taut on the nose, more orchard and citrus than tropical.
The palate is light to medium bodied with clean acidity down the middle and a lightly chalky, saline grip through the back half. Nothing is overworked here — the texture is dry and slightly oily, and the finish closes short and savoury with a bitter almond twist that is entirely typical of the variety.
Pour it with anything from the coast: grilled prawns, whole flathead with lemon, spaghetti alle vongole, or a plate of oysters. It also handles fried food well, from calamari to zucchini flowers, and sits comfortably alongside pecorino and a bowl of olives before dinner.
Drink the Soprasole Vermentino 2025 over the next two years, well chilled, while the citrus and salt are at their most vivid. There is no reason to cellar it.
