Greco is a lesser-seen white variety in Australia, and Hither & Yon's 2025 release gives McLaren Vale drinkers a chance to taste the savoury, textural style it is known for in southern Italy. The colour is a deeper straw than most crisp whites, hinting at the weight to come.

Preserved lemon, wet stone and a herbal, slightly bitter edge run through the nose and palate alike, with none of the overt tropical fruit more common McLaren Vale whites can show. Texture sits ahead of fruit here, with a firm, almost chewy quality through the middle of the palate and a faint smoky note that surfaces on the second sip.

The finish is dry and mineral, with a lingering, savoury grip rather than fruity sweetness, closing on stone rather than fruit and holding that grip for some time.

It suits olive-heavy antipasto, grilled calamari or a simple white bean salad, food that can meet its savoury edge rather than needing sweetness to balance it out.

It is a wine best served well chilled and drunk within its first couple of years, while its savoury edge and texture are freshest.
