Showing a great sense of elegance and style, the wine exhibits white flesh nectarine, lime peel, fig and white floral nuances on the nose. It's immensely focused and concentrated on the palate delivering beautifully layered mouthfeel and fine flow backed by racy acidity. Brilliantly composed with outstanding purity and tension.

Season Notes:

The season started with a record frost that left Greystone with very small bunches of fewer berries, but greater intensity.

Careful organic management left us with lovely clean fruit with gentle sun exposure through leaf plucking and shoot positioning.

A dry autumn meant fruit stayed disease free and ripened evenly.

Fruit was harvested in the cool of the early morning to retain freshness and acidity.

This fruit comes from 28 year old Riesling vines on Glasnevin gravel soil.

Winemaking:

Whole bunch pressed before vinifying in stainless steel.

Fermentations were long and quite cool between 12 and 15 degrees.

Judicious fruit selection meant Greystone had lovely clean fruit to work with for a drier style that balanced the crisp phenolics with a hint of fruit sweetness to finish.

Lots were blended together after five months on yeast lees, before estate bottling without fining.
