Wangolina Semillon (2023)

Wangolina's Semillon 2023 grows on South Australia's Limestone Coast, a maritime climate that gives this variety the acid backbone it needs to develop well over time. It is a dry white, made without the emphasis some regions place on early drinkability, pale lemon in the glass.
Lemon, green apple and a touch of lanolin lead the nose, with a faint herbal note in the background. There is a subtle honeyed quality that hints at how the wine may develop with age.
The palate is crisp and taut, with racy acidity and a long, dry finish that shows real precision. There is a chalky, mineral undertone that adds further interest to the texture.
Pour it with fresh oysters, grilled fish or a simple green salad - dishes that let its acidity shine. It also suits a simple lemon and herb roast chicken, or a plate of fresh figs and prosciutto to start.
Semillon rewards patience, and this has the structure to develop further complexity and a deeper golden colour over the next five or so years.
