Tasting Notes:
Sauvignon Blanc and Semillon are picked on the same day and fermented together for four weeks.
The cabernet is picked two weeks earlier and pressed directly to ceramic egg where it remains until the wine is assembled.
Aromatically this skin contact wine is bright and savoury.
The palate is powerful with bright grapefruit and melon.
The wine then savours off to a supple finish.
About Patrick Sullivan Wines:
2018 for Patrick Sullivan was about aspiration and achievement.
It was about the further ongoing commitment to biodynamic farming, through completing an initial certification audit across all five sites farmed by the estate.
The wines from the 2018 harvest are proving to be the finest release to date, showing unmatched depth and purity which can only be a reflection of farming and patience.
