Domaine Vincent Girardin Pouilly Fuisse (2020)

The vibrancy of fruity dark cherry, tar and fresh spice is balanced with a clean mineral edge. Both explosively flavoursome and resolutely crisp, this wine, originating from the vineyards from the village of Santenay in the Côte de Beaune, where Vincent Girardin is born is perfect for any event.
Vines are located in the Santenay Village area, in the south of the Côte de Beaune. Mainly from the parcel "Clos de la Comme" located just above the 1er Cru "Beauregard”.
Soil : clay and limestone. The subsoil is composed of different limestone layers (pebbles, marly soils). The slope is strong.
100% Pinot Noir - Guyot pruning with different yearly works in the vineyard (pruning, trellising on wires/tying-in, thinning fruit-bunches).
The grapes are harvested by hand and sorted out when picking the grapes. The grapes are wholly pressed in a pneumatic press at a low pressure to get a slow extraction. After a cold settling and gentle racking of the must, the wine is put in French oak casks (15% of new oak) of 500 liters named "demi-muids”.
A month before the bottling, the wine from the different barrels is put in a stainless steel tank to make the blend. The wine is finally fined and gently filtered before bottling it following the lunar calendar ("fruit” day to get a wine on freshness and minerality).
Dry and full-bodied wine, with notes of dried and preserved fruits and honey combined with a nice acidity level which brings a nice balance and a good mineral length.
