A powerful nose of citrus and pineapple.
Smoke and mirrors with different flavour bombs with each mouthful.
Stones and pebbles, green gage fruits and cashew nuts.
Creamy mouthfeel yet flinty and Chablis like.
Very fine tannins and elegant finish.

Laissez-Faire means 'let it be' and this reflects the Cherubino hands off approach.
Although leaning towardws organics, bio-dynamics and natural wine practices, the team at Cherubino are not dictated by one school of thought - they don’t subscribe to dogmathey prefer to think of them as 'post natural wines' believing in healthy and sustainable vineyard practices, and a winemaking transparency with as little as possible between the vine and finished wine.
A lot of wines presented as 'natural' can be sourced from chemically cultivated vines without accountability, Cherubino grow all their own grapes with minimal copper treatments.
The Laissez-Faire winemaking ensures there is no added tannin, or acid, or animal fining products. There is zero sulfur used throughout the winemaking, and only a minimal amount at bottling. We're using alternate varieties and blends to make naturally balanced wines.
From vine to bottle, the wine takes its course, hands free.
