The Domaine Drouhin-Vaudon Chablis 2024 is an organically certified Chardonnay from Burgundy's Chablis sub-region, made in the lean, mineral style the appellation is known for. It shows the region's cool-climate character clearly, with no fruit-forward softness to hide behind, and it drinks with the precision Chablis is famous for.

Green apple, lemon pith and white flowers dominate the nose, with a flinty, almost oyster-shell edge underneath and a faint whiff of wet stone. The palate is taut and linear, carrying that same citrus and orchard fruit through cleanly, with a savoury undercurrent that keeps it from ever feeling simple.

Acidity drives the wine, giving it a chalky, saline texture and a long, dry finish that never strays into richness. There's real tension here, the kind that makes you want another sip rather than a whole glass at once.

Chablis was made for shellfish, and this bottle is no exception — oysters, grilled scallops or a simple sole meunière all bring out its best. It also works well with goat's cheese, or a plate of fresh crab with nothing more than lemon.
