The Tolpuddle Vineyard Chardonnay 2025 is a taut, cool-climate white from the Coal River Valley in southern Tasmania, built on citrus and struck-flint reduction rather than richness. Precision is the point here — this is Chardonnay with the acid line drawn straight down the middle.
Grapefruit pith, white peach and lemon curd lead the aromatics, with a smoky, matchstick edge and a chalky, sea-spray lift behind them. Give it twenty minutes in the glass and roasted nut and white flower characters come through.
The palate is fine-boned and long, more linear than plush, with nectarine and preserved lemon carried on bright natural acidity. Texture builds through the middle without softening the shape, and the finish is dry, saline and persistent, closing on flint and citrus zest rather than fruit sweetness.
Serve it with Tasmanian oysters, cured ocean trout, scallops with brown butter, or a roast chicken with lemon and thyme. It also handles richer seafood — crab, lobster, a creamy fish pie — because the acidity does the cutting for you.
Drinking well from release, though the Coal River Valley acidity in the 2025 suggests it will reward five to ten years in a cool, dark spot.
Pull the cork on young bottles an hour ahead, or decant, and serve at around 12 degrees rather than fridge-cold.
