Greywacke Sauvignon Blanc 2025 is Marlborough's best-known style done at its most refined, a wine that helped define what serious New Zealand sauvignon blanc could be. It trades pure pungency for texture and detail, without losing the region's signature freshness, a balance that has made it one of the most sought-after sauvignon blancs to come out of New Zealand.
Passionfruit and lime sit alongside fresh-cut capsicum and a herbal, tomato-leaf edge on the nose. The palate is layered rather than linear, with a mineral, almost saline undertone running beneath the tropical fruit.
A portion of the blend spends time on lees, giving a rounder mid-palate and softer texture than most Marlborough sauvignon, while the acidity stays bright enough to keep the whole thing tense and long.
It handles more than the usual seafood pairing — try it with goat's cheese, green vegetables, or a Thai-style salad where the herbal notes have something to talk to.
Drink it young for the vivid fruit, though the texture here means it will hold well for a year or two without losing its shape.
