The Paddy Borthwick Paper Road 2018 Pinot Noir is medium-bodied and packed with flavour!

Dark fruits and spices in loads – Christmas cake, five spice, and blackberries are all there.

Dark ruby red, almost impenetrable, intense notes of little red fruits, blackberry and red cherry jam, together with fine spicy notes. Smooth, elegant tannins, full body, enveloping. Long finish.

The red wine Silenzi Rosso, Isola dei Nuraghi IGT, from the house of Pala, hails from Sardinia. The grapes are sourced from high espalier-trained vines that are 30 years old.

Its beautiful intense ruby color with purple reflections heralds an intense nose with notes of red fruit. In the mouth, it is well-balanced with good persistence.

It pairs well with primi piatti as well as grilled meat and moderately aged cheeses. It can be kept for up to 2 years and should be served at a temperature of 16°C to 18°C.

The 2017 vintage of Pala Isola dei Nuraghi Silenzi Bianco is a well-balanced and expressive wine. The Vermentino grapes were harvested by hand and fermented in stainless steel tanks to preserve the wine's delicate flavors and aromas. The wine was then aged for several months in the bottle before being released.

On the palate, the Pala Soprasole Vermentino is lively and refreshing, with a bright acidity and flavors of citrus and green apple. The wine has a medium body with a smooth, rounded mouthfeel, and a long, clean finish. This wine is a perfect match for seafood, especially shellfish, and can also be enjoyed with light pasta dishes, salads, and vegetable-based dishes.

Pala Stellato Vermentino di Sardegna 2021 is a vibrant and refreshing white wine from the island of Sardinia, Italy. Made from 100% Vermentino grapes, this wine has a brilliant pale yellow color and an enticing aroma of white flowers, tropical fruit, and citrus zest. On the palate, it is dry and crisp with flavors of juicy yellow peach, ripe apricot, and tangy lemon zest. The wine has a good balance of acidity and minerality, making it a perfect pairing for seafood dishes and light salads.

Medium-bodied, the palate is brisk and racy with lively fruit flavours of savoury red berry fruits melded with fresh, dark herbs with some red floral detail.

On the nose, the Palliser Estate Chardonnay 2020 reveals notes of ripe stone fruit and citrus, with a hint of nuttiness and oak. On the palate, the wine is full-bodied and rich, with a creamy texture and vibrant acidity. Flavors of peach, apricot, and lemon are complemented by subtle oak and a mineral finish.

Pale lemon in colour with striking clarity. Musky and intense with notes of orange blossom, passionfruit pulp, black currant, Rose apple and white peach. Ripe and juicy in the mouth, this captures the Martinborough style of sauvignon perfectly. Bursting with passionfruit and juicy calamansi lime, this is plump, succulent and refreshing all at once. Complex and charming, the acid is juicy and palate cleansing without dominating the wine. The perfect style for those who: 'Don’t drink Sav'!

Very pale lemon, nearly transparent. A bright and expressive nose showing acacia flowers, freshly cut apple, lemon blossom, lime and a hint of apricot. Crisp, clean and bracingly dry on the palate, the crystalline purity of the wine is the standout feature in its youth. An energetic acid line and wet-riverstone minerality add length and texture, finishing with a whack of red apple and key lime.
