Made only in years when we feel there is an outstanding parcel we would like to keep separate, 2015 is the third time we have made a MDB Chardonnay. Once the primary ferment is complete for all Chardonnay wines, we do not rack or move the wine for 11 months. This means each barrel is unique and allows us to refine our selections to decide what will make up the Reserve, Estate and potentially an MDB wine. In making this wine we are looking for a true reflection of a particular site on the property, as well as a wine that will age well for at least 10 years.

Aromas of citrus fruits, cashews and white flowers reflect the season, the palate balanced between finesse, length and creamy texture. The acid line drives through with a persistent and long finish.

A wild barrel ferment has resulted in a very restrained, inviting aroma of lime and fig with a subtle nutty character. The flavour profile continues this theme, and the 2021 version of South Block is one of great balance and harmony.

This is a voluptuous, silky wine with plenty of blackcurrant and mint. The palate is mouth-filling and flavoursome with soft, velvety tannins.

With air, new aromatics: fresh baked croissant, almond flour and kumquat. Pure, compact and driving; tense and full of kinetic energy. Showing the seemingly endless sunlight and perfect growing conditions of 2018. Lifted and framed by classic Hilt sea salt and electricity on the finish along with touch of structure that is reminiscent today of an Asian pear.

Aromas of ripe peach, grapefruit marmalade, blossoms and complex yeasty flavours complement the toasty oak in the wine. The palate is clean with a lovely texture and long finish.

This luminous pale yellow Chardonnay with its resplendent green reflexes offers a pleasant aroma of meadow flowers, typical for the variety, reminiscent of exotic fruits. It is slightly tangy, well structured as well as full bodied with a long-lasting finish.
