The subsequent fruit intensity stretches out an already long palate, with flavours of stone fruit and apple etched by a line of clean and fresh acidity. There’s more mineral and rain water in the finish, where there’s a textural element that provides some breadth, giving dimension to the otherwise acid linearity.

A fruit infused sake made from one year old Junmai Sake and Yuzu Juice from Wakayama - the juice is produced using the entire fruit to allow for a sweet, sour & bitter flavour.
