The palate starts out with crunchy red fruits complimented by the whole bunch used in fermentation and the French oak used. Lovely ripe tannins with a fresh acid backbone to carry the flavours right to the finish. The lingering after taste makes for a very enjoyable Pinot Noir.
The colour has a very appealing coral hue. Sangiovese has a floral element to its aroma and this dominates with Turkish delight and almost rose water in the background. The palate has vibrant spice/ginger notes and a dry finish, and while technically a red wine, has plenty of zesty acid. Perfect out of the ice bucket.

Excellent colour with medium to deep density and purple hues. Lovely sweet cedar and blackcurrant notes from the Cabernet and background vanillin and nutmeg from the French oak. Sweet fruit up front on the palate with Turkish Delight and dark pastille flavours. Fine tannins carry to finish. An immensely enjoyable wine that will reward cellaring.

By combining those two characteristics we get a really classic Grüner Veltliner with both finesse and a certain vigor.

Saignee, technically meaning “to bleed game meat or poultry”, refers to the way we ‘bleed’ juice for this wine. We allow the Farr Rising pinot noir fruit to sit in tank for two to three hours before bleeding free-run juice at a suitable colour for rosé production. This process concentrates the pinot ferment, but we also produce a barrel-fermented rosé. Natural barrel fermentation at cool temperatures is followed by full malolacitc fermentation. The wine is then placed in four- and five-year-old barrels for 10 months before being filtered and bottled.
