By farr Sangreal Pinot Noir is a unique wine, the taste is earthy and lightly smokey. It has the scent of dark cherries and is recommended to be served with beef or poultry.
Saignee, technically meaning “to bleed game meat or poultry”, refers to the way we ‘bleed’ juice for this wine. We allow the Farr Rising pinot noir fruit to sit in tank for two to three hours before bleeding free-run juice at a suitable colour for rosé production. This process concentrates the pinot ferment, but we also produce a barrel-fermented rosé. Natural barrel fermentation at cool temperatures is followed by full malolacitc fermentation. The wine is then placed in four- and five-year-old barrels for 10 months before being filtered and bottled.
A bright nose of savoury, earthy elements and lifted sour cherry notes leads to a palate made firm by ripe tannins and driving acidity.
Caledonia Australis pinot noir is full of flavor including sweet berries. It is well aged and has the nose of berries, serve with beef or veal.
Fairly typical of the best of this style from the Gippsland region with the added mineral complexities we attribute to our granite soils.

Ripe instead of over-ripe fruit is spiced with notes of black pepper and underbrush along with some hints of oak, and framed by rounded tannins.
The character of Mendoza wines is forged in high altitude desert vineyards irrigated by mineral-rich snowmelt from glaciers and snowfields. Altitudes range from 1,000 feet to around 5,000 feet, where the foothills rise steeply toward the Andes’ peaks. We would like to introduce you to our old vines Carinyena (Carignan) from the village of Marçà. The vineyard is located close to a ravine and the soils are calcareous clay-based and slate-based soils.
This wine will offer you volume, plenitude and a rather slower mouthfeel, which is true to a more reserved grape variety such as this one: Carinyena (Carignan). It is also denser, more obvious on the tongue, which is due to the soils where this Carinyena (Carignan) vineyard is planted.
